Chewy Peanut Butter Cookies



Chewy Peanut Butter Cookies

2 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon salt

16 Tablespoons (2 sticks) unsalted butter, softened but still cool

1 cup packed light brown sugar

1 cup granulated sugar

1 cup extra-crunchy peanut butter

2 large eggs

2 teaspoons vanilla extract

1 cup dry-roasted salted peanuts, ground to resemble bread crumbs

10 Peanut butter patties from See’s Candies cut into pieces

Heat oven to 350 degrees.  Whisk flour, baking soda, baking powder, and salt

together.  Set aside.  By mixer beat butter until creamy.  Add sugars; beat until

fluffy then add peanut butter until incorporated.  Then add eggs one at a time,

then vanilla.  Gently stir in dry ingredients and ground peanuts (peanuts are

optional).  Roll 2 Tablespoons into 2 inch balls and press with fork.  Bake until

fluffy in the middle and slightly browned on the edges.  Do not over bake.

Put peanut butter pieces randomly on top of cooling cookies.  Cool cookies

onto a wire rack.  You can also add peanut butter chips to this recipe.
