Anyone who knows me knows I love
the Barefoot Contessa, also known as
Ina Garten. So when her new cookbook
came out this month I started cooking, I
mean eating, I mean cooking my way
through it. Here are a few of my favorites.
Chocolate Cake with Mocha Frosting, is
fantastic. The instant espresso powder
really brings out the intense chocolate
flavor and the frosting with Kahlua is a
great combination. Make it as a sheet cake,
it does not work as a layer cake – don’t ask.
Let’s just say it gives new meaning to
Mini Italian Fittatas are my new tradition
for Christmas morning. These delicious
egg muffins, with two different cheeses,
are perfect for a small or large crowd.
Skillet Brownies are dangerously good. I
actually went to my camping supply store
and bought these mini skillets to make these
cocoa delicious brownies. Really worth it
if you love your brownies warm with chocolate
chips and melting ice cream on top.
The Herb-Roasted Fish was super easy to make
and is a new staple in my house. Really really good!
The Sour Cream Corn Bread, I thought, needed a tablespoon of
honey added to the recipe; but then I like things
sweet. Wild Mushroom & Farro Soup is the perfect
winter soup with rich satisfying flavor. Enjoy!
